let's heat our oil. I'll be using 3 week old french fry oil that's been in the fridge. we at the tendie test kitchen find this to be both economic and practical. we have yet to study widely reported incidents of feminization resulting from consumption of seed oils.

best frying method is light fry, then let them rest for a couple minutes, then fry again. it's what chinese american restaurants do when they make orange chicken.

Oh, yeah.. here's all of them

Anyway, from left to right we have breaded, double floured and one single floured on the far right.

Single floured was nice. A slight, soft outer coating.

Double flour is fire. Soft and juicy salty chicken with a nice crispy exterior that has some crunch to it. Better than the single flour coated. Worth the extra effort.

Now the breaded. The crispiest of all three. Very good flavor.

I think the breaded wins. I expected the double flour to be the best, but the breaded was slammin'.

this concludes the today's testing.

initial findings indicate breadcrumbs yield superior tendies. more testing will be required before this can be confirmed.

You know what is really good is if you use a ranch dressing packet and you mix it up with the egg and a splash of milk. So you flour the chicken, then dip it in that mixture then bread it and it tastes super good
