I love making scrambled egg tacos.

I just load up a reheated tortilla with fluffy scrambled egg, slices of avocado, and either a fresh pico de gallo or pickled onions to add a fresh, acidic element. If you want more protein, you can cook up some spanish chorizo or bacon and add it in.

huevos rancheros are bomb.
the traditional way is to fry a corn tortilla in a lot of oil, add an egg to the top of the tortilla to fry it into the tortilla, then pour a lot of salsa on it when serving, refried beans on the side.
pic related is how my dad used to make them for us as kids. flour tortilla fried individually, paper toweled of excess grease, add refried beans and a fried egg on top, then shredded cheese, sour cream, avocado, fresh salsa. makes a high calorie breakfast cake.
