My mom gifted me this today. What can I do with it? Would it be good in eggs?

Eggs would work. If you're making scrambled eggs, a 1/4 teaspoon mixed in with some salt and pepper will give the eggs a nice smoky/spicy essence without being too overbearing.

You can use it as a supplement for chilis or any kind of tomato based dishes like ghoulash or even spicy pasta sauces.

Essentially, in small amounts it will impart a smokey/savory flavor in your dishes, but you'll need to experiment to get used to it. Work in 1/4-1/2 teaspoon increments when adding it to dishes to be safe and you should be ok.

I don't know if it being hot or smoked would get in the way or not, but make Polish food.
Many dishes that has paprika in it.
Goulash for example
