I like Brian a lot and he's a pretty cool guy. Just really wish he'd stop talking like some caricature of an idiot millennial. Guy unironically talks a lot like my restaurant's social media employee who's just a dumb trust-fund, instagram addicted art school dropout. Wouldn't be shocked if he actually doesn't talk much like that in person and it's just his wife writing the script.

But overall I like that Brian actually has put in real time in real kitchens, as opposed to other "chef" youtubers who worked as linecooks for a hot minute. Most of his bread recipes are great that even our head baker at work likes.

I don't watch these guys to learn how to be youtube famous, I learn them for insights into the cooking process. A failed line cook can't teach me shit about cooking, an experienced chef can. I don't give a fuck about youtube fame, and I would happily watch the worst youtuber with 1000 subs and shitty video quality with less than a hundred views each if it meant that I would learn something new about cooking. Early weissman had decent videos, like the sourdough starter. Nothing super complex but it was presented in an easy to digest way while still being valuable information.
After he got popular though he started playing more into the recipes for flexing than actual utility. Spending hundreds of dollars to "dunk" on a $1.50 Mcdonalds burger while saying stupid lines about kisses and calling himself papa.

If I wanted to make a successful cooking channel, I would probably start with all the people on my faggots list. I could learn so much from them, just not so much anything about cooking. There are some little tidbits here and there, but you have to tread through a lot of bad advice and videos full of stuff I already know to get there.
