So these are supposedly a thrifty dinner, but they are made with pork shoulder and liver, where am I supposed to find these? In my store they only have tenderloin and ribs. Do I need to go to a slaughterhouse and ask them or? Do they even taste good?

You could probably order those meat parts online. Do a google search, it's good for finding local businesses.
Never had faggots myself, but I think they should taste good, because I know of a hamburger recipe that also mixes offal with regular meat.

Find the meats that are cheap where you live. Make food with those.
