Was I in the wrong for arguing with the manager over this?

Order steak medium, tell waitress I want it medium but to cook it for 45 seconds-a minute more than they do for medium because I want it a bit over medium but not medium well.

Way too much information. People send back steaks all too often. If you aren't happy with a fullly cooked medium well, then state "medium" only. If you aren't at a Ruth's Cris or similar, then assume they can and will fuck it up, and you need to be happy with a range of possibilities on this spectrum between medium and well. 45 seconds more? No one is going to find that useful information ,but rather some kind of threat in advance that you will be unhappy. It's going to depend on the ounces of the steak and original temperature whether it's make any difference whatsoever.

I waited tables for years before going into management.

I had no problem at all putting on a fresh pot of decaf. The Bunn is so cheap and easy to just push. You can actually start a new pot, bring out the waters and other drinks then circle back and it's brewed.

It's zero hassle.

I completely disagree on this one. In my experience the vast majority of people who order medium/medium-well don't really understand meat temps or know what they want. OP is a perfect example for wanting something between medium and medium-well. He probably thinks he's being sophisticated or something, but there's no significant middle spot between those two temps that anybody would really care about. People only order medium well because they think it's below them to order well done, but well done is probably all they've ever had at family bbqs or fast food, so they have zero frame of reference. If you fuck up medium rare or send out a well done steak that's still pink in the middle that's a different story, but medium well fags are just going to smother it in sauce and choke it down without a second thought.

It gets comped because the order was wrong, or messed up, or took too long, or there was generally just something else that happened that caused the customer to have a bad experience. That's not what happened with OP. He made a special request and they told him they weren't going to do it.
