How do I make sauerkraut to the strictest of German and Slav snownigga culinary tradition.
I looked it up on the internet and the recipes say different things. I i never fermented anything and I don't want to fuck up.

What salt do I use and what cabbages ?

Traditional recipes are probably some shit like "cabbage" fermented in enough brine such that an egg will float seasoned with caraway. In modern days, just use a 3-5% brine enough that it submerges whatever amount of shredded green cabbage and caraway.
