not only did they have the best mætballs around they were also a pizza place so they had really perfected their sauce. the trick is to make sure it holds together (fuk u subway) and is substantial. they glue it all together with provolone cheese. so fucking good.

Because they're sub-ingredients of the meatballs. The textured vegetable/soy protein isn't in the meatball, it's a coating. They're probably using it instead of flour to serve the same purpose and artificially bump up the protein count at the same time. Cheaper than flour, too, at an industrial scale.
