Because most "Chinese" places are actually run by Vietnamese, Thai, Cambodians, etc. They just pour soy sauce and syrup on gristly meat and call it Chinese. Thai restaurants are almost always run by actual Thai people at the very least, so they have some knowledge and pride for the food they serve.
