If I have 100 ovens and slow bake pizzas 1 per hour I still couldnt bake 6 million pizzas in 5 years. What am I doing wrong?

8,760 * 100 = 876,000
876,000 * 5 = 4,380,000

that's just one oven house.
imagine if you had 6.
4,380,000 * 6 = 26,280,000

let's say they took 3 hours so you had a really nice and tender pizza:
8,760 / 3 = 2,920
2,920 * 100 = 292,000
292,000 * 5 = 1,460,000

that's just one oven house.
imagine if you had 6.
1,460,000 * 6 = 8,760,000

that's a lot of pizza.
hope your ovens don't burn too hot and reduce them to ashes.

In the pic that's low moisture mozz cubed up. With fresh you'd want to strain it overnight. Dough starts with 200g of a 110% poolish I made with a pinch of yeast and some kombucha, then 500g BF, .25tsp yeast, 350ml water, 2tsp salt, 1tbsp sugar, 2tbsp olive oil. It's over 80% hydration so it's a bitch to work with, currently trying a similar batch but only 70%. Pic is a 68% yeast dough that I shaped and froze. Oven is about 600 on the floor.
