Until you spend 20 years learning how to katsuramuki, place two rods on a wet cloth and rotate a vegetable towards a razor sharp edge. It will still take time to learn, or you will never learn if your knife is shit, but it is far easier than shaving paper thin in midair. Or you could use seaweed like a sane person.

I've mentioned this before, but there's a sushi place I know that does a roll with shaved cucumber that's been soaked in ponzu. It's honestly kind of annoying and if the wrong chef is on duty it's a total mess, but when done right it's a pretty great dish.
