added the courgette slices and seasonings (mix of chili, thyme, paprika, cajun and a few other of the usuals) with some water, milk and newman's own cajun sauce and let simmer for ~10m stirring regularly all along
added a chopped tomato and some hot sauce and simmered for a further 5 or so mins

TikTok tomato feta pasta! I added a few things though. I added chopped shallots on this one. I've done pearl onions on other occasions.
I also pour in about a pint of heavy cream after baking but before stirring/mashing and adding pasta.
Pic 1 is unstirred, pic 2 is after adding pasta.

Next time I do this, I'm thinking I'll put the cooked sauce stuff into a food processor though. It's really tasty, but the fibers from the onions & tomato skins throw the texture off a little.
