no wonder there are no french restaurants around me because it looks like rocket science with all the recipes and stages needed. I am probably too broke to get Venison, duck legs or rabbit meat although i need to try this shit out one day incase anyone has.

they're all free if you have a hunting license. alright that's a lie, the tags also cost money.
i'm sure any friends or relatives of yours who hunt would be glad to send you some.

duck is pretty affordable, being factory farmed for its meat, liver, and fat. it's about as much as organic chicken.
