both. I work friday and saturday double to increase profit. The homeless are at their prime at about 12pm. I walk to work at 8am at most are still asleep (would you get up early if you didnt have anywhere to be) and they are actively begging when I leave around 11 pm. The ones who use meth are seeing their afternoon around then. The more sober homeless are hoping to get some cash from the drunk crowds and will taper off until around 2:30.

you could try vigorously rinsing them prior to boiling. On top of that you could cook them more al dente.

Gnocchi is also an easier handmade pasta to make so idk, this route might be more prudent to you.
