eggs are so fucking cool. today for the first time I made an ice cream custard base (with 5 large yolks) and now it's chilling in the fridge. Might have fucked up and left the milk out too long after I scalded it for an infusion since I got really into doing some yard work lol so we'll see. Then I use the egg whites to make meringue for the first time (got a pro 600 refurbished kitchanid for $220). It's in the oven right now for another hour. Holy christ though both used so much sugar lol baking is going to make me fat if I'm not careful. Then I used the leftover milk and cream to make sweetened condensed milk since I found a recipe to do it quick if you keep it near 185f and I have a temp probe with a stick in that works. Going to make dulce de leche oven style once it's done cooling down in the fridge. Also a lot of sugar. Also tempered chocolate for the first time in the microwave and it's so simple and now I have a tray with a thin layer of it ready to mix into the ice cream. This knowledge is too dangerous bros

For me, it's the egg. The best food. I even ask for extra egg and the shop staff is so friendly and more than willing to oblige.
One time I asked for eggs and they gave me three. I said, "Wow, three for free!" and the nice friendly grocery store's worker laughed and said, "I'm going to call you 3-for-free!".
Now the staff greets me with "hey it's 3-for-free!" and ALWAYS give me three eggs. It's such a fun and cool atmosphere at my local grocery store, I go there at least 3 times a week for eggs and a large egg with yolk instead of cream, 1-2 times for breakfast on the weekend, and maybe once for dinner when I'm in a rush but want a great egg that is affordable, fast, and can match my daily nutritional needs.
I even dip my eggs in egg sauce, it's delicious! What a great store.

I can have eggs but I cannot have dairy things that are loose/liquid like milk, ice cream or melted cheese. but a piece of pizza I am just fine or slices of cheese like on a sub etc. started at 17, now 35. used to care but now I've been eating healthy so it's kinda a miracle
