Can we have an unironic hot sauce thread? I never got in on the craze, and I just use pedestrian hot sauces like Texas Pete and Cholula. But I love them. so I was wondering specifically if there's anything like a better chipotle cholula. I can imagine it bein' all thick and smokey, mmm.

I'm not a hot sauce connoisseur basedboi, but from what I understand the general consensus is that the chipotle Cholula as well as the green chili version are legitimately just really good sauces. I haven't gotten around to trying the chipotle variety myself yet but I do very much enjoy the green one and tend to keep it on hand pretty much always for when I'm making tacos and shit.

Chipotle cholula is what my wife always gets, it's pretty good. I like sriracha too, mixing it with peanut butter goes great with chicken, and mixing it with mayo is fantastic on most sandwiches.

If you genuinely like spicy food (mexican, sichuan, thai, etc) then I think it is well worth going down the hotsauce rabbit hole.

A good rule of thumb is just to avoid anything that brags about being spicy ("Satan Sauce," "Colon Cleaner," etc). All of the actual good hotsauce I have had is only moderately spicy at best and can be enjoyed by people who aren't spice-trained (even the habanero blends).

For classic stuff I think original Cholula, Tobasco, and Valentina are easy to find staples. Cholula goes great on sandwiches, nachos and tacos. Tobasco I use in beef marinades, meatloaf and chili. Valentina is an essential ingredient/flavour to me when making huevos rancheros. For modern meme sauces, everything I have tried made by Heartbeat and Queen Majesty has been delicious; I mostly use meme sauces when making tacos, nachos or burgers, but they can also be good on other grilled meats or seafood depending on the sauce. I usually use chili oils or red pepper flakes for spice when making asian dishes.

I typically have 3-4 bottles in the fridge. Cholula is great on eggs and a jamaican beef pattie. I like Lousiana sauce for some red beans n rice, or dirty rice, or a cuban tamale, Tapatio when you want to use more and not get too much vinegar.
But, I have chili pastes that I use more, like the calabrian chilies, the lao gan ma superr chili crisp crunchies on rice, the nam pla chili paste in dips and salad recipes as well as stir fry sauces.

Green is good and tastes like verde I've had from taco trucks in Californias Central Valley, however I feel like they've changed the recipe to add more vinegar lately and it's ruined it for me. Chipotle is also good, a smokey hot sauce, basically.

Tapatio is the best picante for sure that's under 4 bucks in my area.

For 10 dollar plus hotsauce, I use los calientes for mexican/texmex food, I use seafire gourmet reaper sauce on burgers and anything that goes good with bbq, I use hotter than el on chinese food and ramen, I use xtreme karma on anything cheddar based like mac and cheese.

Those are all my go to.

Yes. Make your own. Even with dried peppers you can make it better because you can tailor it precisely to your own taste and specific dishes. I usually keep some tomatillos and peppers vacuum packed and frozen for hot sauce whenever.

can anyone recommend an unseasoned capsicum extract or something just plain hot to use in drinks, confections and baked goods? steeping chili flakes in vodka works well, but i want something stringer and easier to keep on hand.
and to keep it thread related, I really like jalapeño sauces, they have such a mild and bright flavor that goes well with almost everything. i grew a bunch of jalapeños this year and am looking forward to trying to make some of my own.

Cholula is the only "hot sauce" I actually enjoy. I don't really consider siracha or any of lao gan ma stuff hot sauce though. They're condiments that happen to have some spice to them. I enjoy them as well, it's just a different category in my head

Slightly related: which lao gan ma product do I actually like? I had something at a taiwanese church I was going to for a long time, but I neglected to read the label past the old lady picture. Between that and their product naming scheme that makes it impossible to discern a difference besides beans or no beans my odds of picking the right one are fucked. I just remember it being very savory/salty and it didn't have a sesame taste to it
