Are you sure?
Seems to me it's more likely that back in the day, red pigeon peas were uncommon outside of India, Africa and the Caribbean. I would imagine Jamaicans abroad adapted to use kidney beans instead of pigeon peas in much the same way South Asians and Africans have. Now that pigeon peas are more common throughout the English speaking world, there's no reason to continue to use kidney beans beyond the possibilities that they've grown to like them more than they do pigeon peas or they fear customers at their restaurants lack familiarity with pigeon peas and like kidney beans just fine. Of course, there may be other explanations, but these seem most likely.
