A slice of mature Cheddar cheese may have more flavor and taste significantly stronger than American, but does that make it good for all possible cooking applications? Of course not. Sometimes you want a different flavor profile, something mild or something with a different texture. I tried making grilled cheese with american cheese and it honestly made me want to vomit.
There was an unnatural amount of richness in it that my mind just couldn't accept as actual food.
Maybe it was because I used a very light sandwich bread and if I used a more rustic bread it would have balanced out. But it literally gave me a headache.
