Croissants. No, not the ones you've had. They have to be made properly. The good ones.

These are calzoncelli, they are traditionally made for Christmas in Campania (The region of Italy where Naples is)
The filling is made with chocolate, pinenuts, dried figs and dried pears (The last ingredient is optional, recipe may vary based on family tradition), while the dough is a simple pasta frolla, the thing is fried and topped with honey and sprinkles
If I could only eat one thing before I die this is pretty likely to be it

I don't know if it really counts as pastry or what but.

The best tasting sweet thing I've had was a piece of pizza dough spread out to roughly...burger size? in a pan oiled with plenty of butter, and then topped with maple syrup.

I used to make these things I'd call albino tadpoles.

I'd do about 6" squares of puff pastry, rolled thin, and fill them with a mash of cream cheese, smoked salmon, horseradish, dill, capers and pickled beets with a hit of mustard powder. Fold up up like cappalletti, but with the "legs" crossing - so square folded corner to corner like a triangle, watered and pressed to seal, and the empty corners folded past each other. Baked until flaky... pretty gosh darned good.

I can try to think up something, but it was always eyeballed. Something like 1/4 cup cream cheese, a 6" square of smoked salmon, the equivalent of a 2" sphere of pickled beet, 1 tsp each horseradish, dill, and capers, and 1/4tsp mustard powder for a reasonably sized pack of puff pastry?

>> No.18148223

akilidough

basically just a fried dough square folded so that it forms a bit of a pocket you can stuff other sweet things into
usually served with a plethora of jams, sauces, and toppings so you can pick and choose

similar to a taco bar, but for a birthday party or something
