sauerkraut and mushrooms is a popular pierogi filling here in Poland, sauerkraut and potato I've never seen
but you can fill them with anything and they're still pierogi. lately feta cheese and spinach pierogi have become popular, as well as chilli con carne pierogi (usually called just "mexican") for example

What the anon above me said is correct although I've never heard of the Mexican ones desu. My grandma always makes them with meat, mushrooms and sauerkraut which isn't really a thing in supermarkets since they're either sell them with meat or mushrooms and sauerkraut but they're the best thing ever to me
