How far past the "best by date" can you go before you will need to be Steve1989MREInfo-tier in order to eat it and not get sick or die?

Steve isn't superman, he's gotten sick and had a bad case of botulism.
what keeps him safe is he is hypervigilant about any puctures, bulges, or deformations of any kind in the can.

but to answer your question, so long as the seal is uncomprimised the food inside will remain edible almost indefinetly. it won't taste good, but it won't kill you.

No idea, but I've eaten soup that's around 5-7 past their best before dates and I've never been sick. I had a can of corn a month ago that was close to a decade old and I was fine, but I did notice it tasted a little off.
