and not to get too personal or anything because I know we're just sorta meeting here on this latin egg-boiling conundrum but, I see your eggs are perfectly peeled and also supple. were these fresh straight from the Egg Man or were these a couple weeks old? the reason I ask is because I always buy eggs when I want eggs and those fresh motherfuckers never peel well for me. /ck/ lore says only slightly aged eggs peel well. thoughts?

These eggs had been sitting in the fridge one week, but picrel was how they peeled the day I bought them. I put them in cold water but sirred them so they shell cracked a bit and some cold water could sit in the cracks before I peeled. They peeled efficiently with very little egg membrane being removed from the egg during peeling. As you can see, there are some small divots, but overall a respectable peel. The eggs were organic free range from a local farm. My week old eggs were refrigerated but they ones in picrel had not been in the fridge.

I think that's the key! the last eggs I made were a shitfight to peel, the first one went totally bonkers but the ones that sat the longest in the ice bath peeled better. def from now on I'll be doing the ol' crack'n soak

As I mentioned above, after boiling, sit them in cold water but stir the eggs aggressively so they knock into each other and the shells get multiple small cracks. They peel cleanly and with ease.

you boil the water, making a baseline for drop in, my favorite is 8 mins, you try 8 mins and see if you like it, you can adjust accordingly, use a spoon to gently drop eggs into the pan. some might crack but that's fine, let them boil, you will learn in time
