parboil and fry in animal fat

>> No.18096990

pat them down before you fry them works for me bro. also you want way more heat in the pan than you would for the eggs and shit

Isn't that a pain in the ass? Seems like they'd just break apart when you grab them

did you cook those eggs in the sausage drippings? They look very burned.

bake them until desired doneness, use starchy potatoes like russets, not waxy red or even yukons. Starting with par-cooked, either baked or micro-baked potatoes that were chilled down overnight in the fridge is most helpful for nice browning and crispness.

Just butter, I like a crunch on the bottom and hate it when the tops are undone so I let them crisp on the bottom. I can't do flipped eggs without cooking the whole yolk so I do them this way
>>18096991
I use chopsticks for most things because it's more fun than a fork and knife, ive gotten pretty good at scooping em

Boil/fry in bacon grease and you are going to think I am trolling but I am not. Add some astroglide in with it. It has glycerin in it that makes it taste sweet and slick. Primarily bacon grease though.

If you don't already, spoon some of the butter or grease on top of the egg while cooking so the bottom doesn't burn so much. Also you're more skilled with chopsticks than I am.

I just put the egg on top of the hash brown so the yolk sauces it. I used to prefer crispy patty-style hash browns but the looser nest like in your picrel is better for absorbing egg goop. some vinegary hot sauce is pretty nice, too.
