Buy flour, wash it, prepare seitan. If properly prepared it doesn't taste that bad, but it's not complete protein, so if that is all you eat, about 50% of the protein doesn't count. Eat a healthy meal with the seitan though and you can approach 100% protein completeness.
Eggs are also decent and easier to prepare.

I used a gallon of store brand, pasteurized milk for reference. Raw milk doesn't magically lose protein when it's pasteurized; the benefit of raw milk is the bacteria, much of which is beneficial.
And regarding fat, skim milk has the same protein content. It's just the milk fat that's removed, which is why it's thinner and less flavorful.
