Obviously your sandwich made at home will be better than a deli if you are buying better ingredients and make your own dressings.

vegetables

oil and vinegar, salt, pepper herbs or parmesan and things like that go on top of the vegetables

This for the most part, but if you're using more cheese than meat you should put the cheese on first, then the meat, and then the rest of the cheese. Opposite order if there is more meat. It balances the texture more so than meat cheese cheese or meat meat cheese.

It makes no difference whatsoever. Once you take a bite you take a bite of the whole sandwich and everything gets mixed anyway.

The only exception is if you want to keep your sandwich for a while before eating it, then you want to avoid soggy bread, cheese tasting like meat and veg gone limp by sauce. That's not just unappetizing, it's an unhealthy mix of bacteria. Stop doing it.
