Most of us Americans make chili by playing it by ear, but here are some general tips for good chili:

-fry the crumbled hamburger or cubed beef steak pieces in bacon grease or butter
-chop up and saute onions and sweet peppers with the beef
-don't drain the fat!
-add lots of beans, kidney are my favorite but you can use a good variety of beans such as pinto, black, navy, or fava beans (drain and rinse them if you're using canned)
-be liberal with spices; salt, black pepper, cumin, chili powder (especially), garlic (or garlic powder), cayenne pepper, red pepper flakes, smoked paprika, cumin, some people even add cocoa powder to their chili
-add all your spices to the meat/veggies when you fry them, and not after
-you can also add chopped up chilies if you want
-tomatoes are also extremely important - you'll want to use tomato sauce as the liquid base for chili, you can also add a little extra tomato paste, or chop up some tomatoes and add them
-add something for a little sweetness, you can use chopped up carrots, some ketchup, or brown sugar for this
-you can add some vinegar or lime juice toward the end of cooking time if you like
-chili needs to cook for a long time at low to medium-low heat; at least an hour to meld the flavors properly, or you can use a slow cooker
-if your chili is too thin, you can add corn flour to help thicken it
-chili is basically an extremely thick stew so be sure to serve with some kind of bread, cornbread is the best!
-top chili with shredded cheese, green onion, and sour cream for best results
-other good toppings to consider are lime, cilantro, jalapenos, avocado, cream cheese, or tortilla chips

Use a thick pot or kettle, it helps to moderate the temperature while you cook. Proportions are all up to you - if you want a lot of meat, if you want it thin or thick, if you want it mostly veggies or mostly beans, how spicy you want it, etc. Chili is one of those dishes that benefits a lot from using fresh ingredients.

This is the top result on Google but it certainly works. It tastes awesome. I did make some variations to the recipe; I added in bell peppers and a diced jalapeño in with the onions; what can I say I'm super cool like that.

BTW you can add beans if you want, nobody cares. I live in Texas now but I'm not from here so I certainly dgaf I'm only doing what they tell me to do.

I roast my onions, tomatoes, garlic, and chilis to make a base. Split the onion and garlic in half. One to roast, one to sweat. I use chicken thighs or pork shoulder marinated over night. Cook on low until they fall off the bone. Season as you like. Not counting the soaking of beans and marinating overnight, cook on low for about 6-12 hours.

Mine is usually:

>Take them out, place them in a blender along with whole cilantro and coarse salt, blend until smooth

>Lower the heat and move the rack to the middle level in the oven
>In large dutch oven, add blended ingredients, meat and its juices, beans, and some adobe sauce
>Grind up around two or three tablespoons of cumin

brown minced beef in pot, remove it
cut onions, bell peppers, garlic and brown them
re-add the meat, can(s) of crushed tomatoes and spices: cumin, paprika, chili powder, salt, black pepper (even ginger if you want to), as well as veal stock.
cook it more than 1hour
add canned kidney beans and canned corn if you want (if using dry beans, re-hydrate them and add them from the start)

Honestly I'm not usually one to shill for stupid seasoning packets since you can make your own, but this one is about as standard chili as you can get. There are so many different varieties and types, but this is just pure baseline.

Has the right combination of chili powder, cumin, black pepper garlic powder and onion powder. Just dump a pack of this in with 1 lb ground beef, a couple cans of unseasoned tomato sauce and whatever else (onions, beans, diced tomatoes). It's not the best by a longshot, but it's also super easy. Optionally just google chili seasoning.
