I have to soak my beans for 48 hours, cook them once and dump the water, then cook them again. Otherwise, I get super bad cramps and gas.

Real sorry to hear that Anon. I don't know if there's such a thing as a bean allergy but sounds like there's something going on in ya. Most beans contain a toxic lectin that can give stomach pains and gas, but this lectin is easily removed by soakin and boiling. Hope to hear about some successful bean meals from you soon. Put them in a pan of warm water and mix in a couple of tablespoons of ACV, lemon juice or vinegar. It helps neutralize the anti-nutrients and break down the complex sugars making the beans more digestible. Leave them out on the side over night, 12-24 hours. Drain them and then rinse them a couple of times. Add fresh water, boil, turn down to simmer, cover and leave to cook for six hours.

Six hours? Gee friend, I've cooked a lot of beans, and one or two hours has always been sufficient to me, given they've had a proper soakin beforehand. However I've always believed you should "bean and let bean" so I won't tell you how to cook em, I'm sure they taste great. Stay safe Anon.

I think so. Canned beans include "firming agents" so they don't seem to get that soft creamy texture that regular cooked beans can have.
