I don't get it, how do they get the meat to look like that? I know what stacked lamb meat would look like, it wouldn't look like that. How does it look so "homogenous" and smooth? I'm not talking shit tier dogmeat stands owned by illegal immigrants, even the upmarket kebabs and shawarma look like this.

You can even see those tryhard YouTube chefs who try to "improve" fast food when they make it at home even with their gyros stand you can still see the layers of the original meats.

the one I'm thinking about mainly is this. chicken and pork I can usually see layers and tell how it was created by stacked pieces, but this shit confounds me. It definitely doesn't taste or resemble the texture of ground meat either

It's either just ground meat run through a bowl cutter so it gets the consistency of fine sausage or slices of meat and the ground mass from above alternately layered where the edge are cut of so it's a perfect cone. The stuff they cut up can be grounded again and reused.
At least here in Germany the versions made just from slices of meat are very rare when it comes to kebab. Gyros on the other hand is just made that way as it uses the much cheaper pork.

There are legit kebab places where you can see the slices of meat. But the cheap ones where you get the salts and the extra nutrients from the random paki's sweat, it's just meat paste from different parts of the animal.

Stacking meat is fun. I think I also seen a stainless steel upright skewer I could use, because the onion/potato methods absolutely suck.
