any tips for good hash browns?

I feel like I've been getting my recipe down but still want to get it closer to that breakfast restaurant style. so many recipes ask for the grated potatoes to be extremely dry but it takes so many paper towels (which all the dumbass mommyblogger recipes suggest to use) and that has never worked for me. current technique:

>grate pototato
>cook in fat of sausege/bacon/breakfast meat
>throw in potatoes, get some color
>add a bit of water, cover w/ stainless steel bowl for 5-10mins low heat
>ramp up heat the the end after salting to get it crispier

What're your methods?

if you're having moisture problems i feel bad for you son, take all your grated potato and gather it into a ball, then squeeze it over the sink. That ought to make it dry enough

can you dry them out by putting them on a plate in the fridge overnight? I think chinks do this with rice to make fried rice.

the trick is to wash the grated potatoes in water to rinse all the starch off, then while cooking the water evaporates leaving the rest of the starches and sugars to caramelize and crisp up. Wa-lah, crispy af hash browns

>toast dry hash browns in the butter for a bit
>add chicken broth a half cup at a time
>once your hash brown risotto is tender form it into thin patties
>refrigerate until firmed up
>coat in flour
>pan fry until heated through and nice crust formed

no idea if this will work btw I'm considering going to the store to get stuff to try it out

geezus this is really simple.
grate potatoes in to water.
rinse
put clarified butter in really hot pan.
squeeze water out of potatoes between paper towels
put potatoes in pan.
cook for 5 minutes.
don't touch them,
leave them alone
NO
don't do it
not yet.
ok now flip them.
maybe add more butter if needed.
cook for another 5 minutes.
don't fiddle
don't stir
don't fuss
not yet
OK now they are ready.

that's it don't add water don't cover don't salt until done

Ok anons I am giving this a try. I currently have the patties in the freezer to firm up. I added a cup of milk but otherwise have followed my plan. I added an egg to help bind and I'm gonna skip the flour before frying. The hash brown risotto is really good just like that but this frying should really step it up

you can try cooking potatos into a dry mash, form it into a hashbrown with cornstarch or flour or something, then put it into the freezer. I havent had time to try that myself

They turned out really well. It's basically a latke on steroids with it's crunchy crust and rich creamy risotto like interior. With some mushrooms and parmesan they'd be even more amazing.

I grate and put in a bowl of water for half an hour or so. Drain the grated potatoes and gather into a thin towel and twist that bitch with my manly hands and thick wrists until all the water is squeezed out. I then heat up a couple of tbs of bacon fat in the cast iron skillet and toss in potatoes when really hot. Arrange it into a uniform height circle and do not touch until it is ready to be turned. Add more fat as needed.
