Either this opinion springs from the mind of someone who grew up with alcoholic parents, or who has someone struggling with addiction close to them when they were young. I work back of house in a very high-end restaurant.
We rely on wine and Champagne sales for profits. We pretty much only break even on the food.
The server's job is therefore not simply to haul plates back and forth but also to know the wine card very well and talk people into buying more wine and more expensive wine.
When it becomes clear to her that your table will not be buying any wine she focuses on the other tables instead. She (in our place at least) won't resent you for it, but you're simply not worth her limited time.
Consider it a form of triage.
