fried rice and stir fry in general benefits from almost constant stirring to get everything equally cooked. unless you're only doing a very small portion this would be tough to do in a standard pan without spilling it on your cooking surface

You don't need a wok, a high walled skilled or sauce pot will do.

Woks do have some advantages due to it's shape, you pour the liquids (be it sauce, oil, broth) in the middle and it lends well into mixing in ingredients like rice by folding it in.

Also if made properly, there should be a gentle slope to the shape of the wok and as such, if you cook something in the middle which is hot, but want to let it cool or go to less heat, you scrape that food up on th e walls to get less direct heat and then fold it in later.

So example I put a bit of oil and turn the fire medium to cook/ soften up some vegetables like carrots and brocoli and pea pods, which is usually hard unless well cooked ( you could have boiled them half way as prep, but whatever)

Move the carrots, brocoli and peas to the side wall.

Then you can throw in the faster cooking stuff like carmalizing onion and bell peppers (all chopped fine)

Move that to the side walland then cook up the thin cut beef maybe some mushrooms if you are adventurerous.

Then combine all the incredients with rice and some extra sauce or broth...maybe a bit of butter and WHAM, you have fried rice.

Trafitionall fried rice is made with old cooked rice that has hardebed the night befire and this is a way or softening it up and falvoribg leftovers.


Same with fried dumplings, but the gui lao like it, so resturants cook it from fresh rice and dumplings

Every day they keep me as prisoner in this place. I don't know if it's out of a sick and twisted enjoyment of my suffering, or simply because I am doing a adequate job as their slave.
I know that the second I stop being of use I will be the next one in the wok. Thus I cook.
Everyday I watch as hundreds of my bretheren, my own children and siblings are brutally beheaded, gutted in front of me and then added to the wok. The stench of the flesh of my kind being cooked is ingrained in my brain. I hardly sleep anymore. Even outside of the kitchen I hear the sizzling. There is no escape.
And I hate myself for being complicit in this twisted system. Yet I am a coward and afraid of the wok, so I keep doing my part. But I am reaching my breaking point, the wok is starting to call out to me. Every day I consider just giving up and offering myself and every day I, coward that I am, do not say anything.
Hell will smell like this wok and I will have deserved all of it. Recently a customer complimented me on the fruits of my labor, no doubt enjoying the suffering this puts me through.
Tomorrow I will finally throw myself into the wok. I could have done so when I first was imprisoned here, but I was weak. Now I will finally be free, but my previous apprehension will mean I will go without my soul intact. A fitting fate for a coward such as I.
