Are inside out sushi with the rice on the outside more popular than regular sushi these days?

Also what are some good sushi to make? Everything just seems to be some variation of the california roll.

So as bastardized as this is, hear me out,
My local sushi place has a roll with salmon, yellowtail, and tuna in some sort of spicy sauce that they deep fry. I know, I know, but it's a very quick and light trip into the fryer, and they serve it was a seaweed salad on top over a drizzle of eel sauce. That shit is to die for and fills you up pretty well to boot. I'm the kind of guy that can rack up a $150 bill at a conveyer belt sushi place just by myself, but that roll is not only thick as hell, but fried and served with the salad on top. Fucking cash right there.

As for good sushi to make... Good fish + well prepared rice = good sushi. Ridiculous rolls with tons of ingredients are an abomination (excluding ehomaki for setsubun). Sushi is generally a case of less is more.

I'm partial to kinmedai or kinki.

The style of sush you're talking about
is literally called inside-out roll (uramaki).
American bastardized sushi became popular enough that a lot of people see uramaki is normal / standard and traditional nigiri sushi as the less usual kind.

fried sushi can be pretty based. The local one in my area (every sushi place is run by koreans) has these thick pieces of lightly fried sushi with soft-boiled egg on the inside. It is quite kino.
