Spam and egg breakfast sandwiches are very good if you ignore the feeling that it's chipping away at your lifespan. Bacon is a hassle at times to cook while spam can be eaten cold if you are a starving neanderthal. I'd honestly prefer spam in my sandwich over bacon.

I like it a lot, I went to my school's food pantry nearly every week and got spam as well as canned tuna and chicken. Agree that it's very salty, even the reduced sodium version.
Cubing it up and frying until crispy usually ends up making it too dry, so I just slice it exactly like op, actually cook it in that exact configuration as well lol

Eat about half a can with eggs and coffee for a somewhat heavy but satisfying way to start the day

You can buy the same shit frozen and it's half the price.
As spam has no appreciable texture, it doesn't taste any different after freezing.
You can also buy this fresh as bologne, which is free of the toxic nitric salts and is just as cheap.

From what I can understand nitrates and nitrites aren't inherently harmful (vegetables have tons of them). The problem is how they combine with protein under high heat (ie cooking) to form nitrosamines. Theoretically vit c can help stem the damage but I guess vit c + fat actually makes it worse.
