GialloZafferano is good, i think it's the most viewed channel/website in Italy.
The quality of the recipes are quite inconsistent but the are generally good.

The best yt channel about Italian cuisine is italiasquisita. It's more a food channel than a cooking channel and they talk about high modern Italian cuisine but they also present the traditional Italian recipe and the videos have English subtitles.
Another good channel akin to giallo zafferano is "casa pappagallo" but iirc they don't have eng sub

i think pineapple only clashes when the ingredients aren't as subtle and flavorful as you'd get with simple homemade/local ingredients. the really sharp sweetness it has helps hide the taste of additives/grease of mass-produced commercialized pizza without sacrificing any of the depth you would've gotten with quality crust/cheese/tomatoes that taste good on their own.
i've never eaten extremely quality hawaiian next to margherita though so idk.
