We must learn the forgotten secrets of stretching out main ingredients.

- Cut your meat with bread crumbs, rice, oatmeal, potatoes, onions, etc. The days of 100% meat main courses are over.

- Stretch ingredients with soups, stews, and gravies. Adding a bit of flour and/or water multiplies a single serving.

- There is no such thing as food waste. Stale bread must become breadcrumbs. Beans and vegetables become soup. Scraps become stock (this includes things like onion peels, it's all useful).

- Preserving food is a must. This doesn't just mean vacuum sealing and freezing. That's bare minimum. Being able to cook and store large quantities of fresh ingredients is important due to seasonality, and taking advantage of bounty when you get it.

- Look to cuisine of poor countries. A dish that always comes to mind is vada pav from India. Chickpeas, potatoes, and bread rolls become a fried potato ball sandwich covered in various sauces. This is a much more 'efficient' use of calories in terms of increasing satiety, and flavor can be increased with a small amount of toppings. Would you rather have a plate of boiled chickpeas, potatoes, and a pieces of bread? Or a fried sandwich with chutney and other toppings?

There will be 'food shortages' but that will really mean your food choices being reduced to what's more local and seasonal. Even as recent as 50 years ago, the idea of being able to get nearly every fruit and vegetable and day of the year was unthinkable. Having every obscure product from across the US on the shelf was impractical. If you live in cattle country you'll have beef, if you live in pork country you'll have pork, if you live on the coast you'll have fish. Fresh Pacific tuna being flown into your local Whole Foods is a fucking joke. We will look back on it and marvel at how good we had it.
