As other anons have said, a nice thick cut sourdough is perfect. I'm also partial to some Texas Toast.

For cheeses, you can literally use almost any soft, melty cheese. I usually just use whatever I have leftover that needs to be used up. If I had to pick a perfect blend, it would be Dubliner White Irish Cheddar, and some ricotta smeared on either side.

Don't forget to use butter or mayo on the outside of your bread, and don't use too high of heat.

MOCK STARBUCKS GRILLED CHEESE RECIPE (The Best Grilled Cheese)
(If your family or whoever drags you there, don't get a sugar bomb coffee, get a sandwich. but also don't get a sandwich because they are overpriced. Get tea I guess but their tea is also shit)

- Round loaf sourdough bread (like from the store bakery section)
- Mayo
- Room-temp butter
- Pizza topping shaker cheese (parmesan asiago mix usually)
- Mozzarella
- Medium Cheddar
- optional: garlic powder and/or black pepper

It is better to buy brick cheese and grate it yourself. If you are lazy you can use shredded cheese and you can use sliced sourdough bread.

Slice round loaf sourdough.
Spread mayo on the inside of both slices (I draw a line across the bread and spread it, dunno how much that is, not tons.) This keeps it extra juicy.
Add freshly grated mozzarella and medium cheddar and combine sandwich.

The secret? Put enough room temperature butter in a bowl to butter both sides of the bread. Now add a heaping tablespoon of that pizza shaker cheese and blend it in. Optional garlic powder and black pepper for more taste. Spread that on the outside of the sandwich.

It is really good to turn the entire loaf of bread into sandwiches (I get four out of it) and wrap them in tin foil and keep them in the fridge until you are ready to cook them. Just in the pan like normal.

To reduce calories you could use light mayo or no-sugar greek yogurt probably, and use less cheese but that's sad. To increase protein you can add a couple slices of thin-cut sandwich meat like turkey. It would probably be good with sliced jalapenos inside too.
