Mexican is quickly becoming one of my favorite cuisines and it deserves all the positive recognition it gets. I don't know if some of you guys are trolling or just never had real Mexican food but the whole "Mexican food is just the same 5 basic ingredients in different arrangements" thing is so wrong.

Mexico has a super diverse and regional cuisine.

My favorite is the stuff from Yucatan, lots of seafood and pork and very citrus heavy. Cochinita pibil is the most famous dish from there.

Chiles en nogada is the national dish so try that out.

If you ever make anything homemade try making some tamales, enchiladas are easier. The advantage of doing it homemade is you can make a stock and use the liquid and lard to flavor everything.
Dried chili's help a ton, ancho's are the smokiest, pasilla's are the sweetest, guajillo gives the most red color and arbols are for heat. Add that + onions ,garlic, green peppers, you have a really good base for rice, beans and sauces.

Pretty much all Latin American cuisines are light on vegetables. The American (British too?) traditional meal is a meat, a starch, and a vegetable, so Americans are very good at preparing vegetables in an appetizing way. Latin America doesn't have that same three-component meal framework but I couldn't explain to you the history of why that's the case. In Mexico at least, the "vegetable side dish" is probably going to be beans. Practically any use of greens is exclusively as a part of a soup/stew, or as a topping, i.e. quelites in a quesadilla, or in certain dishes like romeritos en mole. Mexicans are fucking terrible at crafting salads.

Hey Anon, I had to text my mother because I couldn't find it, but here it is:


8 California Peppers
2 mulatto peppers
1 Pasilla chili
3 tomatoes
2 tomatillos
10 almonds
1/4 of an onion
3 garlic cloves
1/2 apple
1/2 tortilla
1/4 cup peanuts
1 cinnamon stick (peel a piece of cinnamon)
4 cloves
3 peppers
1 pinch oregano
1 pinch of cumin
1/4 cup of raisins
1/2 plantain

You have to fry everything a little until it softens
And grind little by little using an immersion blender for best results
Then in a separate pot add a touch more oil in a pot and put 1/2 bar of chocolate and when it dissolves, integrate the mixture into the original little by little until it is completely integrated and thick.
Add salt to taste and chicken broth or water to thinas needed

Something simple that you can do at home if you can get decent chorizo is chorizo & eggs. What I do is:
>Start browning chorizo
>Once a bunch of fat renders out add a chopped onion
>Mix until onion is translucent
>Add eggs and pickled jalapenos
>Cook until eggs are done
Wa la. Be forewarned, this will heavily lubricate your insides and if the grease gets on your clothes it will be as hard to get rid of as pepperoni hot pocket grease. Make sure to get Mexican chorizo, it's a bit different from Spanish chorizo which is best used in stuff like sauerkraut soup.
