had just under a half pound of ground beef that I needed to use, so more wop slop and meatballs it is. italian night never ends.

make some spherical meatloaves. egg, breadcrumbs, herbs, etc. brown the shit. it's not rocket science.

My meatball tip is use half ground pork and half ground beef and bloom a pack of unflavored gelatin in the milk for the panade. Replaces the veal which is expensive and can be hard to find, still results in a more tender ball.
