I guess when I was a kid I saw beanie weenie on TV, either on a show or in an ad, and asked my mom to make some, so she added the chorizo to get the color to match the one on television; this was the late 80s/early 90s, so you couldn't exactly look for a recipe online. Besides that, Mexican chorizo isn't like Spanish or Portuguese chorizo, it doesn't keep its shape, since the casing is inedible; it ends up looking more like ground beef than sausage.

not really thinking of a favorite, she has several things I need to steal from her before she dies hopefully before me. it's nothing special but i've nailed the boxed bisquick pancakes. she would make 9 tiny pancakes on the griddle at a time, 3x3, and for the longest i couldn't flip them correctly and keep their shape, but now I can.

once every year or two she made really over the top potatoes au gratin. ridiculously garlicky and basically just a glass dish full of cream, garlic, cheese and sliced potato. your body exudes grease and garlic for days afterward.

for thanksgiving she might make her mac and cheese. bechamel based, purely with grated cheddar. then into the oven to bake it into a greasy brick. grated parm on top if you want.

My mom made amazing beef stroganoff from scratch. Pick up some nice round. Egg noodles. Perfect sauce with sour cream and beef stock. Pair it with a nice veggie and you're stuffed. She also made "shrimp and noodles". Buy some beautiful deveined medium to large shrimp, sizzle them in garlic and olive oil, then dump it on angel hair and mix it all up. A little parmesen on top and you're in heaven.

Creamy chicken and thyme stew.

Whole chicken, chicken stock, minerally white wine, heavy cream, carrots, celery, onion, a whole lot of fresh thyme, dried ginger, salt pepper, butter.

1. Pan fry the chicken a bit in the pot with a little bit of butter on all four sides.
2. Remove chicken from pot and save for later.
3. Construct your sofrito on low temperature to enhance sweetness.
4. Add chicken back in. And boil with chicken stock until cooked. Then remove chicken from stock, and clean the meat and skin off the bones and return the skin and meat back into the pot after you chop the pieces up a bit.
5. Add dried ginger, don't be shy, but remember thyme is supposed to pop more.
6. Add cream.
7. Add a boatload of fresh thyme (dried works too)
8. Cook and let teduce on medium until your consistency is fairly creamy.
9. Serve with jasmine or similar ish rice.

My mom used to drag out a high lidded electric skillet occasionally and make pork chops in kraut.
