hes right the seed or pit, isn't removed from the olives, they do have very niche brands in the med that make olive oils with the pits removed, and naturally these oils are better as they have less peroxidative compounds but conventional evoo is still way healthier than any other seed oil, the biggest factor is that evoos aren't chemically treated or cooked at high temperatures like seed oils

one could take a basket of olives and press them down with another basket with a stone weight on top, the drippings are evoo

Depends what/how you're cooking. For ez fish/meat on the stove I usually use olive oil to cook and have butter in a sauce if I'm gonna do any butter. Butter always for eggs. Vegetables almost always oil, but mushrooms are better in butter.

If I had to only have one in the kitchen for a week probably oil I guess, just because it's still a decent replacement in most cases and you go through it way slower.
