Pink Lady.
They have the perfect mix of sweetness, tartness, and crisp. Honeycrisp are far too sweet. Cosmic crisp tastes like candy, all the basic apples have no unique profile, and granny smith tastes like nothing. Pink Lady has a distinct flavor of nearly autumnal notes and a gentle tartness that doesn't take away from the bright yet berry-reminiscent flavor. Like a better version of kanzis. Anyone can enjoy them but they require a refined palette to recognize their superiority.

I used to like honeycrisp but have eaten too many meh ones. Pink lady is great but I miss when they were actually pink. Recently been a convert to Opals, good flavor and they seem to hold up well.

Mealy apples are terrible for pie, they break down into a soupy substance when you try. You want to use firm, crisp apples for pie. Mealy apples are best either eaten out of hand or made into juice or sauce.
