I'm looking to survive for a year off rice and eggs. I will rotate adding potatoes, sausage, onions, black beans, and garlic to it. Rotate seasoning with soy sauce, Louisiana hot sauce, and salsa.

My "tasty" meal will be salami, sharp cheddar cheese, cream cheese, and jalapenos on a bagel.

What else can I add to this?

Instead of making two sandwiches, you can make 1½ by using 3 slices of bread and arranging them like this. You eat the top 'wing' first, then it becomes a normal flat sandwich.

Legumes, op. those will provide to much any else you're not eating and cost low.
Not a meat substitute, but a good succedaneus. Rotate with those, beans, chickpeas, lentils. Buy cans if it cost less than dried ones or cost less than cooking, since they need quite an hour on average to cook.
Wash twice, let rest overnight and cook in bulk for more days if you buy dried ones.

also don't exceed with "salami", buy fresh meat once in a while, just wait for offers, expecially near store closing hours

Grow some green onions if you can, pretty easy, use an old plastic container and steal some dirt from a park, can really liven up a meal. Can also grow peppers pretty easy in a window box.
Liver is very cheap and very nutritious, so are chicken hearts. Could probably to a pretty decent oyakodon with chicken hearts and a ramen flavoring packet and some of your homegrown green onions.
