-Get fresh beans. Best beans still have the dried out flower on the pod.
-Failing that soak your dried beans overnight.
-Throw away the soaking water (imperative)
-Bring to a simmer in unsalted chicken stock, add baking soda.
-Simmer a clove of unpeeled fresh garlic and anchovy from the bay of Biscay/Sardinia. Either is fine.
-Add your beans and a sip of aged balsamic vinegar, Maldon salt and freshly ground Indonesian black pepper.

These are great cold with sweet Tropea onion and olive oil, with fresh (raw) or even canned tuna, as a pasta salad or soup or served with pork. The greasier the better. Look for cotechino.

Italian refried beans

Fill slow cooker with whole, washed pinto beans and water, soak overnight. (helps with gas and gritty texture)
Come out in the morning and add chicken stock, salt and 10-15 whole garlic cloves (one small heads worth)
these will cook on low all day
about 3 hours from when you want to be eatin beans, remove the garlic.
Prepare a mix of Anaheim, jalapeño, serrano, hatch, pretty much any green chili peppers. Usually, the bigger the pepper, the less spicy it is.
Cut the peppers in half, deseed, throw on roasting pan outside up with your wet garlic.
Use a torch to burn the fuck out of them until charred completely black (or throw them under a broiler.)
Mash the garlic and add back to pot a' pinto
wrap the peppers up to cool so they steam a bit as well
the skin should slide off under cold water (prepare to cough a lot)
dice your green chilis and add them back in. Cook another hour, stirring, slowly cooling and thickening
enjoy tasty plate of pinto beans.
The next day gets even better.
Take a skillet with lard or tallow and refry those niggas. Perfect in the morning for huevos rancheros or later paired with Spanish or Puerto Rican rice (also super cheap to make)
There's also the obvious burrito, but you can also just mix salsa/ hot sauce and cheese into a bowl with your beans and microwave them for a crowd pleasing bean dip.
