I mean, there are "blacks" who descended from the parts of Africa which do have proper civilization and culture. The thing is that the ones who were sold off as slaves were usually bottom-of-the-barrel uneducated types who upon arriving in their new homes could barely carry on a small inkling of their original culture.
Africans in Africa rarely associate themselves with the idea of being "black". They have their individual nations, cities, cultures, histories, etc. that they identify with. "Blacks" have none of that, and cobble together an identity based on skin colour and some assumed heritage.

African American Cuisine IS southern cuisine because southern cuisine is a fusion of the spanish, caribbean, french, anglo, and african influences of the people who settled and lived in the southern United States and being a cook was seen as a menial job which was largely done by Africans, both as slaves and freemen.

If you want southern white food, you're basically going to be looking for the Creole/Cajun, who draw almost exclusively from those spanish and french sources.

jokes aside a lot of dishes used to be "slave food" made from scraps ex. collard greens, chicken feet, okra(brought from west africa)
