the excess of the american ranching/farming tradition has led americans to figure out how to use the cheap cuts of meat. this is why americans laugh at other countries when they talk about bbq. the trick isnt in the cut of meat its how you cook it, americans figured out the bbq pit or the offset smoker would render the fat to a point where it tenderizes the tough cuts. if i hand you a brisket and u cant make it tender and juicy that speaks more on ur cooking ability than somebody that can.
