I doubt it will come out vibrant yellow unless you add food dye. It doesn't look too weird in the pic but I'd smooth the top a bit

Absolutely. Stainless pans are as ubiquitous as any other type, although they are usually a little pricier. Good to have a couple.

Does it taste kinda weird? Usually having iron dissolvee into your food gives it a kinda distinct flavor.

if it's legit eggs then it's what the other anon said, your pan was aluminum and it reacted with the acid in the lemon. If it was a tempering issue then you'd have scrambled eggs.
