I've had this idea of a chocolate pancake cake floating around in my head for a while. I'm not sure what info is really important, so I as you forgive me for the wall of text.
My family has a 32oz box of Jemima's/PMC Original mix, about 12oz of cocoa powder between 2 containers, and a pair of 16oz cartons of dairy-free whipped cream, but nobody's doing anything with any of them. Problem is I've never made pancakes before, so I don't know how to adjust ingredient amounts for stuff outside the box recipe, so I was hoping any of you guys might be able to offer some advice.
The box recipe (pic related) assumes I'm making 4 inch, but I'll be making them 8 inch instead so the stack can be sliced like a cake. Obviously I can proportionally adjust the ingredients for the amount I'm making, but I don't know what to adjust for the addition of cocoa powder. Obviously that'll make the batter more dry, so what do I add per cup of mix to make it right?
The other thing is just a question of how much cocoa powder to add to the whipped cream. I want to use it as frosting on the top, sides, and between pancakes in the stack. These aren't the only ingredients I have, but I'm tired of them just sitting around taking up space, so I want to use as much of them as possible.
