Well if I don't put my burners on high the meat doesn't caramelize at all. Even if I put it on medium the meat just sort of stays white or it would just take like 10 minutes to change color. I'd have to find the perfect temp between high and medium, which usually doesn't work out and it just takes too long.

Well i do think some of the fat from the pork was absorbed in the sourdough after i cooked it, but the pork loins i cook are fairly tasteless.

Slow cook it in a liquid to about 135 Fahrenheit and then wrap in foil. Reduce liquid to a gravy and pour over loin.

so, it sounds like you're not waiting long enough to let the pan come to temp somewhat, or it might be that one burner. you need to test all of them, all burners have quirks regardless of diameter
and you should put the garlic in later then if its cooking that fast, something isn't right here in terms of temp/time/process
