Why do these "authentic" pizzas always place the cheese like that? Surely shredding it themselves to get the distribution more even isn't going to lower the quality. If you got a slice from the bottom left of OP pic, half of it would have no cheese

That type of pizza isn't served by the slice. It's an 8-10" personal pizza. For the cheese it's probably because they have a lot less cheese than the American style so shredding it would look worse.

yes..... I am in the People's Republic of Illinois not a margherita, but the local pizza restaurant charges $34~ for a 14 inch deep dish (pepperoni, spinach, and garlic) The pizza is quite good though. Nice as a once a month or so meal. Otherwise pizza is best if homemade round here
