My dad made me get jumbo lump - its 52 dollars a pound which is actually a bit cheaper than the last place I went to where it was 61 or something like that.

The key is to pick the crab clean lightly - there are still a few bone fragments - and then make your crab cake filler - and lightly fold in the lumps of crab - then CHILL them in the freezer before you fry them - and then I put mine in the oven at 325f for 12 minutes to fully cook through.

So for your filler you want some acid, some breading, a little sweet, some herb, some salt, some pepper, and light spices - you don't want to cover the crab too much - I don't like old bay. A couple eggs, some woostyshire sauce, oh and I used mustard and sorghum vinegar for the acid

its ok if its kinda liquidy - and I added some chicken stock too for extra moistness - you want a fair amount of breadcrumbs - gently fold in the crabmeat - freeze it on a greased-wax-paper-lined sheet tray for 45min-75min ~ then fry on both sides over medium heat in some butter

the key is using your fingers along with the spatula to hold the crab cake as you flip it
